We’ve been looking into this and you absolutely should be able to see your previous trips in your logbook on your iPad.
You need to ensure you’re logged into both devices using the same Apple ID, and also ensure that your Health data can be synced between devices. Once this has been granted your logbook on the iPad will pull session data across from your iPhone. To do this, you can follow these steps:
Head to the Settings app on your iPhone
Tap your name at the top
Tap iCloud
Tap Show All underneath the Apps Using iCloud header
Tap Health, and ensure it’s toggled on so that you’re sharing Health data with your iPad
On your iPad, please also go to Settings and ensure you're signed into the same Apple ID account using the same email address
If you’ve followed these steps and you’re still not seeing session data on your iPad, please reach out via the Help & Support > Report a Bug tab in the app and I can look into it further :-)

It would be very useful to be able to access the logbook from both the ipad app and the phone app. You could record the paddle on the phone, then review the trip later at home or with friends on the ipad.
